Healthy Rainbow Slaw recipe by The Clever Cook
This recipe will add a burst of colour to your Summer BBQ spread and what's more, it's made with a much healthier twist! Filled with Vitamin C and Phosphorous this tasty side salad will help maintain immunity and bone health. Perfect with some BBQ'd sausages or tasty burgers, yummy!
Ingredients:
- 3 cups of shredded red cabbage
- 1 large grated carrot
- 100g of soaked cashews
- 100ml of olive oil
- 1 tbsp of tahini
- 1 tbsp of maple syrup
- 1 juice of a lemon
- 1 crushed garlic glove
Method
Place the soaked cashews in the blender
Add 1 tbsp of tahini
Then add the olive oil
Add 1 tbsp of maple syrup
Add the juice of one lemon and the crushed garlic
Blend until a smooth creamy dressing is formed
Slice the red cabbage into thin strips
Grate the carrot and add to the cabbage in a large bowl
Mix in dressing and coat evenly
Place in a bowl and DIP IN - YUMMY
