Hooray! A Bounty bar recipe that is dense and filled with naturally sweetened, fluffy coconut.
These will pop nicely into lunch boxes for a tasty nibble or as a weekend guilt free treat! Whizz, Freeze, Melt and you've got a real treat on your hands! Another tasty Clever Cook recipe.
Ingredients
- 2 cups of unsweetened desiccated coconut
- 4 tablespoons of Canadian maple syrup
- 1 tsp of vanilla extract
- 1 cup of melted coconut oil
- 80g of 85% dark chocolate
- 1 handful of pistachio nuts
Method
- Place the shredded coconut, melted coconut oil, vanilla extract and honey in food processor & blend for 1 minute, until fully combined & a buttery texture is achieved.
- Once blended, take a small scoop of the mixture and pat firmly into a small rectangular shape.
- The entire mix should make 6-8 bites.
- Place in the freezer for 15 minutes.
- Meanwhile, melt a bowl of chocolate on the hob over boiling water and stir until smooth and runny
- Place nuts on a chopping board, cover with a tea towel and firmly hit them using a rolling pin until broken into crumbly pieces.
- Remove coconut bites from the freezer and one by one coat gently in the melted dark chocolate.
- Place on a sheet of baking paper to dry and sprinkle with a little pistachio to finish.
- Now, serve, sit back and enjoy
