A five a day worth going heathly for
Fancy getting one of your five a day in with some brownies?? These soft centred brownies are moist and will give most store bought brownies a run for their money! Made with natural coconut sugar and avocado, these make being healthy a whole lot easier!
How to prepare
Ingredients
- 1 Ripe Avocado
- 1/4 cup of unsalted butter melted
- 1 free range egg
- 2 Tbsp of water
- 2 tsp of vanilla extract
- 3/4 cup of unsweetened cocoa powder
- 1/4 cup of gluten free flour - I use coconut flour
- 1/2 cup of dark chocolate drops from Hotel Chocolat
- 1 handful of chopped walnuts
Method
- Preheat your oven whilst preparing the brownie mix to 180 C.
- Line a cake tin with some baking paper or tin foil.
- In a large bowl, mash avocado very well with a fork. Then place in your food processor. Add the melted butter, egg, coconut sugar, water, and vanilla, and whizz together until a smooth mixture is formed.
- Place mixture in a large bowl and add cocoa powder and stir until fully incorporated and free of any large lumps.
- Then stir in flour and finish by sprinkling in some dark chocolate chunks/chips with walnuts.
- Pour evenly into baking tin and topped with remaining dark chocolate and walnuts.

Gently one by one remove brownies from the foil. This recipe should make 6 brownies. Store in an air tight container and they will stay fresh for 5 days.
