  • 1 free range egg
  • 2 Tbsp of water
  • 2 tsp of vanilla extract

Method

  • Preheat your oven whilst preparing the brownie mix to 180 C.
  • Line a cake tin with some baking paper or tin foil.
  • In a large bowl, mash avocado very well with a fork. Then place in your food processor. Add the melted butter, egg, coconut sugar, water, and vanilla, and whizz together until a smooth mixture is formed.

Pour evenly into baking tin and topped with remaining dark chocolate and walnuts. Bake for 35 minutes until the top has set and turned crispy. Allow Brownies to cool fully before cutting into squares. This can take up to 30 minutes! Patience

Gently one by one remove brownies from the foil. This recipe should make 6 brownies. Store in an air tight container and they will stay fresh for 5 days.

Enjoy!

* Weekend Dessert tip - Heat the brownie in the microwave for 20 seconds. Pour over some Alpro Soy yogurt and thank me later!
