Pesto & Cream Cheese Crusted Cod Recipe
We all should eat a little fish in our diet due to the vast range of health promoting benefits which fish offers. Cod is a lean source of protein, low in calories and high in healthy fats to help maintain brain function and development! What better way to Up your fish intake each than with this tasty Clever Cook recipe. These Pesto & Cream Cheese Crusted Cod Fillets will leave you looking for seconds- YUM! A simple, teatime treat that can be whizzed up and ready to serve in just under 20 minutes.
Ingredients:
- 2 tbsp pesto
- 25g of home made wholegrain breadcrumbs
- 1 tbsp. of low fat cream cheese
- 2 x 150g cod fillets
- Served with sweet potato fries and steamed broccoli.
Method:
- Preheat the oven to 180ºC
- Begin by placing 2 slices of wholegrain bread in a food processor and blitzing together to fine, grain like breadcrumbs form.
- Mix together the pesto and reduced fat cream cheese in a bowl until a creamy mixture forms.
- Slowly add in some breadcrumbs to the mixture.
- Slice cod into rectangular shapes of a medium size.
- Evenly spread the pesto, cream cheese and bread crumb mixture on top of each cod fillet.
- Place in the oven for 17-20 minutes and cook until crust begins to reach a golden brown at the edges.
Serve with some sweet potato fries, wholegrain rice or some side salad for a delicious dinner!
