The Clever Cook’s Sin Free Caramel Slabs

Sin Free Caramel Slabs by The Clever Cook.

Are you planning coffee with friends over your summer break or maybe if the sun peeks out - a picnic with the kids? This Clever Cook healthy twist on the much loved caramel square are made from nuts, oats, dates and dark chocolate- free from refined sugars, which still ooze with creamy deliciousness. They can be popped in the freezer and stored away, although once you taste them I am not so sure they will make it so far!

Ingredients:
Base:

  • 1 cup of cashew nuts
  • 1 cup of oats
  • 1 tsp of vanilla extract
  • 2 tbsp of maple syrup


Caramel Centre:

  • 1 cup of dates
  • 1 tbsp water
  • 3 tbsp of organic peanut butter

Topping:

  • 85% Dark Chocolate

Method:

  • In a food processor place the oats and cashew nuts.

  • Add the maple syrup and vanilla extract and blend until smooth and creamy.

  • On a baking tin spread the mixture and place in the freezer.

  • Meanwhile clean the food processor and begin to blend your caramel. Add dates and peanut butter together and 1tbsp of water. Once blended, if it does not resemble a smooth creamy texture, do not be afraid to add a little more water and blend again.


  • Remove the base from the freezer and gently spoon the caramel over the base and spread evenly.

  • Pop in the freezer for a further 5-10 minutes and begin to melt some 85% dark chocolate in a pot. Remove tray and cut base and caramel layers into medium sized squares before spooning the dark chocolate carefully over each square.

  • If the chocolate spills over the edge, do not panic. Simply cut of the edges with a clean knife, before popping in the fridge to allow them to set!

  • Store in an air tight container and pop on the kettle and Enjoy!
