Coffee Bliss Balls Recipe by the Clever Cook!
Chocolate fix? Coffee fix? We've got both! These little bites of heaven will satisfy any sweet toothed coffee lover, with no refined sugar and filled with wholesome goodness they are a perfect on the go for some guilt free snacking!
Ingredients
- 2 Cups of roasted mixed nuts
- 8 pitted dates
- 1 scoop of chocolate flavour protein powder
- 1 tbsp. of Cacao powder
- 2 tbsp. of organic honey
- 1 tbsp. of espresso coffee
Method
- Pre-heat your oven to 180 C and place the mixed nuts onto a baking tray.
- Pop in the heated oven for 4 -6 minutes, until skins start to break and peel away. Be careful not to burn the nuts, so check regularly.
- Allow the nuts to cool and rub them gently in the palm of your hands to remove skins, and then place in your food processor.
- Add in dates and honey to the food processor.
- Make a small cup of espresso or even regular filter coffee with a little hot water and then place 1 tbsp. of it into the mixture in the food processor.
- Add in cacao powder and protein powder and then blitz the mixture altogether.
- Once all the dates and nuts are finely blended, a dark thick mixture should form.
- Using the palm of your hands roll the mixture into small, bite sized balls.
- Place on a plate and pop into the freezer for 15 minutes to set.
- When removed from the freezer the coffee bliss balls are now ready.
- Pop the kettle on and enjoy!
