Oat & Banana Breakfast Muffins
Is Breakfast out of the question because you simply don't have time? With these little bites of heaven, you can prepare them up and store them safely away in batches and take them with you as you go in the morning! Filled with all things that can make up a nutritious breakfast - oats, banana, nut butter and coconut oil! With one whizz and a short spell in the oven, you have yourself a delicious breakfast on the go! #firmusfuel
Ingredients:
- 200g Oats
- 3 large ripe bananas
- 4 tbsp of organic peanut butter
- 1 teaspoon of baking powder
- 1 tbsp of maple syrup
- 2 tbsp of coconut oil
- Optional: crushed pistachio nuts
Method:
- One by one place each of the ingredients in a food processor together.
- Pre-heat the oven to 180 C.
- Whizz ingredients together until a thick and creamy mix is formed.
- Place cupcake cases into a cupcake tray and gently spoon 1 table spoon of the mix into each case.
- Gently crush the nuts for the topping and sprinkle on top of each muffin.
- Pop in the oven for 15 minutes until golden brown at the edges and remove.
- Allow to cool and when ready simply enjoy on the go with some coffee or heated in a bowl with natural yogurt for a nutritious breakfast or sin free dessert!
