Healthy Green Thai Curry by The Clever Cook
This healthy green Thai curry is the perfect mid-week dinner. It’s super quick and simple to make but really tasty and healthy too!
What’s not to love about that?
Serve it with some wholegrain rice and a little grilled naan and your in for a real tasty treat!
Ingredients (serves 3)
- 3 chicken breast
- 1 clove of garlic
- 1 knob of fresh ginger
- 1 handful of fresh basil
- 1/4 green chilli
- 1 lime
- 2 spring onion
- 1 can of low fat coconut milk
- Optional- alpro coconut yogurt as a thickener
- Mixed peppers
- Sugar snap peas
- Handful of cashew nuts
- Brown wholegrain rice
- Naan bread
Method
- Place chicken on a hot pan and begin to cook slowly.
- Meanwhile thinly slice mixed peppers and set aside.
- Using a blender, whizz together the spring onion, ginger, chilli, lime, basil leaves, garlic clove, spring onion and juice of a lime, alongside the coconut milk, until a thick green coloured mixture forms.
- Now once the chicken is fully cooked add the sugar snap peas and mixed peppers to the pan and then cover with green curry sauce.
- Allow to simmer on a medium heat for 10 minutes.
- If tsauce has a runny texture do not be afraid to add a tablespoon of Alpro coconut yogurt to help thicken.
- Add a handful of cashew nuts to the pan and mix together.
- Turn to a low heat and allow to simmer for a further 5 minutes and whilst simmering cook of your wholegrain rice and grill the naan bread.
- Serve with rice and naan.
