The Clever Cook’s Wheaten Scones Recipe

Wheaten Scones - Just in time for some St.Patricks Day baking!

We all are aloud a little treat now and again, right? And there is no better time than St. Patricks day to jump off the band wagon, brew up a warm cuppa and sit back and enjoy these deliciously fluffy wheaten scone, topped with homemade caramel and crushed hazelnuts! Yumm. This Clever Cook scone recipe requires no more than 15 minutes prep and are hot out of the oven in just 20 minutes! Perfect to share with family and friends over the break.


Ingredients:

  • Scones
  • 225g wholemeal flour
  • 225g plain flour
  • Approx 250mls of buttermilk or fresh milk soured with about 1 tablespoon lemon juice if you don't have buttermilk.
  • 1 beaten egg
  • 1 rounded teaspoon Baking Soda /Bicarbonate of Soda
  • 1 teaspoon salt
  • 1 tablespoon sugar or honey if you want sweet scones (I went for honey)
  • 25gms unsalted butter
  • Caramel Topping
  • 2 tbsp. of crunchy peanutbutter
  • 2 tbsp. of honey
  • 1 small handful of hazelnuts

Method

  • Pre heat your oven to 180C
  • Sieve the plain flour salt and bicarbonate of soda into a large bowl.
  • Add the wholemeal flour and stir to mix
  • Add in honey or sugar
  • Then add in butter, rubbing in with your finger tips.
  • Add in milk/butter milk and beaten egg and mix quickly to form a soft dough.

  • If too wet add a little more flour. If it is too dry add a little more milk.
  • When it is combined tip out onto a floured worktop and form into a round patting it in shape very gently with your hands You need it to be approx. 2.5cms/1 inch thick.
  • Cut out with a 2 1/2 inch/5 cm cutter and place on a baking tray.
  • Pop into the oven for 15-20 mins until golden brown.
  • Cool on a wire rack with a tea towel over them.

For topping:

  • Place peanutbutter and honey into a small pan and heat slowly until a running mixture is formed.
  • Crunch nuts by placing a clean tea towel over them and bang with a rolling pin. Equally you can buy the nuts already crushed.
  • Place one spoonful on top of each scone when on the cool rack and sprinkle with a little crushed nuts.
  • Allow to cool and enjoy!
