Pumpkin Soup
Keep the ghouls away with a nutritious pumpkin and Ginger soup. This silky-smooth seasonal soup will leave the entire family satisfied.
Ingredients
2 tbsp olive oil
1 tbsp ginger
2 cloves of garlic crushed
2 onions, finely diced
1kg pumpkin chunks
700ml vegetable or chicken stock
150ml double cream
Method
Heat oil in a large saucepan
Add garlic and ginger
Add chopped onions and sear until soft
Add pumpkin chunks to the pan and cook for 10 minutes
Add stock to the saucepan
Boil for 10 minutes,
Simmer for 20 minutes or until pumpkin is soft
Add double cream and boil
Blend soup to a smooth consistency
Season the soup with salt & pepper
Serve with a topping of seeds or fine spring onion
