Peanut Chicken & Healthy Noodles! 

Looking for something tasty to kick start the weekend?

This healthy and super easy to make dinner can be rustled up in just under 20 minutes and is one to add to your little pocket book of healthy dinner tricks! For most of us operation summer body is well and truly under construction, as we are all trying our best (well, 70% of the week) to make a conscious effort to strip away some of the extra padding that we built up over Christmas period to get ready for some much needed sunshine! With this courgette "spaghetti" dish you get almost twice the nutritional content and half the carbohydrate load you would over your regularly used white spaghetti. The deliciously nutty chicken blends perfectly with the green bed of crunchy goodness and sets you up with a dinner that is healthy and tasty-WIN!

Ingredients:

  • 1 Bag of Marks & Spencer's or Tesco's Courgette Spaghetti or you can make your own using a spiralizer.(You can purchase a spiralizer at most major supermarkets or department stores.)
  • 2 large chicken breast
  • 3 tbsp of whole earth peanut butter
  • 1 tsp curry powder
  • 1/4 cup of low salt soy sauce
  • 1 tsp of garlic powder
  • 1 tbsp lemon juice
  • Optional * Handful of roasted nuts for garnishing.

Method:

  • Cut chicken into small pieces.
  • In a large bowl mix the peanut butter and soy sauce. Don't be afraid to heat the nut butter for 40 seconds in the microwave to help it mix easily.

  • Now stir in the curry powder, garlic and lemon juice with a large spoon until a paste forms.

  • Preheat a pan with a dollop of coconut oil
  • Place each piece of chicken into the marinate and ensure it is completely covered before placing it onto the hot pan.
  • Turn the chicken pieces regularly to avoid burning and to help cook through fully.
  • Meanwhile, preheat a large wok with little coconut oil and when hot add in the courgette noodle.

  • Allow to heat, stirring often.
  • Once chicken is cooked, place the coated pieces into the noodles and allow to heat further.

  • Stir the chicken through the noodles before serving.
  • Once piping hot, pop into bowls and enjoy!
