Healthy Chicken Fajitas with deliciously home-made guacamole!
Who doesn't love a Fajita? These flavour bombs wrapped up are filled with lean marinated chicken, mixed vegetables, healthy fats and complex carbohydrates that tick all the nutritional boxes!
Make them for friends on the weekend for some tasty, filling, nutritious grub, that will have you in the good books for weeks!
Ingredients:
- 3 large chicken breast
- 3 mixed peppers
- 1 red onion
- 1.5 tbsp of smoked paprika
- 0.5 tbsp of cumin
- 2 limes
- 1 tbsp of extra virgin olive oil
- wholegrain wraps
- cheese (optional)
- Guacamole
- 1 large avocado
- 6 baby tomatoes
- 1 red chilli
- 1 lime
Method:
- Slice the chicken into long thin strips and place in a large bowl
- In the bowl place the cumin and smoked paprika over the chicken
- Drizzle the olive oil, followed by the juice of the 2 limes and stir well
- Allow to sit, covered in the fridge while you chop the mixed peppers and red onion into long thin slices
- Pre-heat a pan and add a little coconut oil. When hot add in the chicken and sliced vegetables. Cooking should take 15 minutes, stirring occasionally.
- Meanwhile, start to prepare the guacamole!
- Remove the skin of a large avocado, half a handful of baby tomatoes and dice a red chilli.
- Add to a food processor with the juice of a lime.
- Blend onto thick and creamy! YUM.
- Once the chicken mixture is cooked, place the wholemeal tortilla wraps on a large plate and pop in the microwave for 15 seconds or under the grill to heat.
- Serve in the wholemeal wrap with chicken mixture, guacamole, cheese and extra red onion with some sweet potato fries.
