Granola, What is not to LOVE?

Unfortunately nearly all store bought granolas are filled with added refined sugar. The sugar that gives you a fast sugary high and leads you craving for a re-fix by lunch time! This easy peasy to make granola not only is free from refined sugars, it contains one of your five a day. Yes, we said it.

Hearty and good, oats, seeds and nuts

Together using Sweet Potato and Cinnamon, this granola is hearty and sweet tasting, which will help put a spring in your step in your bid to get out of bed in the mornings! The base for this recipe is made from all things hearty and good, oats, seeds and nuts.

Keep the body at optimum health

These 3 staples are then smothered together with the deliciously sticky Sweet potato puree. Not only does the puree give this granola it's warming hue, it is also bursting with health benefits, as sweet potatoes offer us with Vitamins C, B6 and D. Alongside these vitamins which help to keep the body at optimum health, Sweet Potatoes also provide Carotenoids, which are a type of Anti-oxidant which helps to protect our bodies from harmful free radicals which can cause cancers.

Make in large batches

Lastly, you don't have to be a master chef in the kitchen either to master this quick and easy recipe! Make this tasty granola in large batches by doubling up ingredients listed, which can help to provide for the whole family on a weekly basis!

How to prepare

Ingredients

  • 3 Cups of porridge oats
  • 1 1/2 Cups of mixed nuts of choice
  • 1/2 Cup of Sunflower seeds
  • 1 Tbsp of Cinnamon
  • 3 Tbsp of melted coconut oil
  • 2 Medium Sweet potatoes

Method

  • Preheat your oven to 180 C.
  • Wash the sweet potatoes in their skin and gently make a few piercings with a knife on each sweet potato and place into a bowl and microwave on full power for 6 minutes.

  • Remove sweet potatoes and aloow to stand for 1 minutes before placing them back in the microwave for a further 2 minutes. 
  • In a large separate bowl place all the oats, nuts, cinnamon and seeds and stir well together.

  • Once the sweet potatoes are finished cooking allow them to cool so you can then safely peel off all their skin.
  • In a small pot place the sweet potato flesh, the maple syrup and coconut oil.

  • Mash the sweet potato with a fork in the pot and place on a medium heat and stir frequently until a smooth puree is formed.

  • Once the puree is ready, gently spoon into the bowl of the oat mixture and combine until fully mixed. 
  • Spoon the mixture evenly onto a large baking tray and place in the oven to toast for 35-40 minutes.



Make sure to stir the mixture every 10-15 minutes to ensure the nuts and oats toast evenly! Remove from the oven and allow to cool before placing the granola in an air tight container!
