Super Green Broccoli & Coconut Soup by The Clever Cook
Soup recipes are something that you can hold on to for life! If your in need of a immune boost, a comforting dinner with a slice of toasted bread or if you simply want to impress some friends with a tasty dinner party starter- you cannot go wrong with a good soup! This broccoli and coconut soup is rich and creamy, packed with green goodness and has a added kick with the help of a red chilli to make it a favourite in any household!
Ingredients:
- 1 white onion
- 1 tbsp of coconut oil
- 2 cloves of garlic
- 1 tbsp of ginger
- 1/2 red chilli
- 1 head of broccoli
- 1 can of coconut milk
- 200ml of vegetable stock
Method:
- Finely chop the onion and red chilli.
- Heat the coconut oil in a large pot and then sauté the onions with the chilli for 5 minutes until golden.
- Next add the garlic and ginger, sautée for 2 minutes.
- While this is cooking, chop up the broccoli then throw it in with the onion mix.
- Stir for 30 seconds with a pinch of salt then pour over the coconut milk and veggie stock.
- Simmer for 20 minutes then blend until smooth.
- Serve with a whole grain toasted bagel or some sour dough bread!
