The Clever Cook’s Healthy Ferrero Rocher

Mother's Day is just around the corner and what better way to thank your Mum in a million than to whiz up some healthy twist Ferrero Rocher? Check out this week's Clever Cook recipe!


Healthy Ferrero Rochers, bringing a new meaning to healthy eating!

An all time favourite, these little bites of heaven taste just as delicious as the original only without the refined sugar and bursting with healthy fats. Wrap them up and show your Mum just how very special she is to you!

How to Prepare

Ingredients

  • Makes 7 Healthy Ferrero Rochers
  • 350g of roasted hazelnuts, with all skins removed.
  • 8-10 pitted dates
  • 1 tbsp. of cacao powder
  • 2 tbsp. of honey
  • 1 scoop of chocolate protein powder
  • 250g of 80% melted dark chocolate
  • 200g of chopped, roasted hazelnuts or almonds

Method

  • Roast 350g of hazelnuts in a hot oven at 180C for 10 minutes until the skins begin to crack.
  • Remove from oven and allow to cool before placing the nuts in the palm of your hands, rubbing together to remove all skins.
  • Place roasted hazelnuts, dates, cacao powder, protein powder and honey into a food processor.
  • Blitz together until a smooth, thick sticky mixture begins to form.
  • If the mixture is not blending together do no be afraid to add a little more honey.
  • Once mixture is ready, roll it into 7-10 bite sized balls.
  • Once all mixture is used, begin to cut a small incision into each ball and place a roasted hazelnut in the middle before re-rolling into a ball again.
  • Now in the food processor blitz together the second 200g of nuts or these can purchased already chopped in most health shops or major supermarkets.
  • Once the nuts are blitz into tiny pieces, place in a bowl to one side.
  • Melt your 80% dark chocolate in another bowl and one by one dip in one of the hazelnut balls, making sure it is fully coated in chocolate before removing.
  • Now dip your chocolate coated ball into the bowl of chopped nuts, rolling until fully coated.
  • Set to one side to fully harden.
  • Store in a cool dry container. These will keep for 7-10 days fresh! (if they can last that long)
