Silky Smooth Healthy Fudge
Fudge is one of them indulgent treats that you only need a little and your satisfied due to it's high sugar and evaporated milk content. It may be any sweet tooth lovers "go to" treat, but we have created a recipe that is not only free from ANY refined sugar, but high in protein and contains no dairy! These little squares of heaven can be enjoyed with an after dinner cuppa or used as a healthy alternative for the kids treats. They are easy to make with minimal ingredients and you could easily fool any non health Guru into being their no.1 fan!!
Ingredients:
- 3 1/2 cups of cooked white broad beans
- 3/4 cup coconut oil
- 3/4 cup cacao/cocoa powder
- 1/2 cup natural sweetener eg, honey/maple syrup
- 1 tbsp of organic peanut butter
- 1/2 tsp of vanilla extract
- pinch of sea salt
Method:
1. Put all ingredients in a food processor and process until totally smooth. Adjust sweetener to taste at this point.
2. Spread the mixture in an 8×8 pan, pressing down firmly.
3. Place in refrigerator for at least one hour or until firm.
4. Slice into squares and coat with additional cacao/cocoa powder.
5. Store in the refrigerator or in the freezer for longer storage or for a frozen fudgey treat.
