Mango, Avocado & Chicken Salad
The Sun is out and why not hop on board the salad wagon with something new and delicious? This sweet chicken salad is not only bursting with fruity flavours but filled with nutritious goodness. Full of healthy fats and loaded with anti-oxidants, this tasty salad can be rustled up in just 10 minutes!
Ingredients:
- 1 cooked chicken breast
- 1 handful of spinach leaves
- 1 tbsp of pomegranate seeds
- 1/4 chopped mango
- 1/2 chopped avocado
- 1 tbsp of almond
- Vinaigrette of choice
Method:
- Place a handful of washed spinach in a large bowl
- Cut chicken into small strips and add
- Add in some pomegranate seeds
- And then some avocado and mango chunks
- Top with a drizzle of almonds
- And, Go outside and enjoy in the sunshine!
