Healthy Potato Salad


500 g small new potatoes
25 ml white wine vinegar
1 tsp. Dijon mustard
1 tsp. wholegrain mustard
75 ml extra-virgin olive oil
2 tsp. honey 
bunch chives, finely chopped
bunch flat-leaf parsley, finely chopped
bunch dill, finely chopped
10 radish, topped and tailed, finely sliced
Salt & Pepper to taste


Boil the potatoes in salted water for 20 mins until just cooked, drain, then cool.
Cut the potatoes into chunks, then place into a bowl with the radish, chives, dill, and spring onions and Bind.
Mix the olive oil, vinegar, honey, and mustards then combine with the potato mix.
Season to taste with salt and pepper before dressing with the finely chopped parsley and serve.

Zesty Kale and Prosciutto Pasta Salad


3 cups uncooked penne pasta
8 ounces prosciutto or Parma ham
1 cup cherry tomatoes, halved
1/2 yellow pepper, chopped
2 cups (packed) kale stems removed and chopped finely
1/4 cup red onion, chopped finely
2 cloves chopped Garlic
1 tsb. lemon juice
Salt & pepper (to taste)


1/4 cup finely grated parmesan cheese
2 tablespoons red wine vinegar
3 tablespoons olive oil
1 clove garlic minced
1/4 teaspoon Italian seasoning
1 teaspoon brown sugar


Boil a large, salted pan of water for the pasta. Cook the pasta al dente. Once the pasta is done, rinse and drain.
In a lightly oiled pan gently Sautee the kale with some Garlic and lemon juice, taking care that it remains crisp.
Meanwhile, prep your other ingredients and add them to a large salad bowl as you go along. 
Combine the pasta and kale with the other ingredients in the large salad bowl. 
Add the dressing ingredients to a separate bowl using a fork to mix the flavours. 
Pour the dressing onto the pasta salad until coated. Season the pasta salad with salt & pepper as needed. You can eat it right away or chill it for an hour or so before eating.
