A double act made in heaven
There is something about the sweetness of sun-dried tomatoes and the saltiness of feta cheese that make them a double act made in heaven! Add in a little chopped kale to give the stuffing that added crunch and to help give an extra boost to the nutritional value of this delicious dish.
Perfect pairing for added taste
These stuffed chicken fillets can be paired with some baked sweet potato, brown rice or mixed beans for a healthy dinner that dosen't lack on the taste factor!
Ingredients
- 3 Large Chicken Fillets
- 1 pot of sundried tomatoes
- 2-3 long slices of feta cheese
- small bunch of curly kale
- 1 tsp of pesto (optional)
- 1 tsp of melted coconut oil
Method
- Prep your fillers by slicing the feta cheese in cubes and cutting your sundried tomatoes in halves with some scissors.
- On a separate chopping board, cut your chicken to almost in half, leaving a pouch so that the filling can be neatly placed.
Feel free to spread a little pesto over the raw chicken breast to enhance flavour. Now add each filler into the pouch in the fillet one by one until it is neatly packed.
* Remember to wash hands when handling raw chicken.
- On a preheated pan with a little coconut oil, place your chicken fillets. A natural gas powered cooker gives a perfect, controllable heat
- Keep to pan on a medium heat to avoid burning the chicken breast.
- Turn regularly and cook for 25-30 minutes, ensuring the chicken is cooked throughout.
Serve with choice of healthy side and enjoy!!
