Bacon & Halloumi Stack
Fancy waking up to a Breakfast of dreams? This breakfast is what Sunday mornings are made for! The salty flavour of the grilled halloumi cheese and bacon work perfectly with the smashed avocado and crispy asparagus, getting you on your way to 2 of your 5 a day at the breakfast table! Top on to some toasted slices of a granary loaf and you will not be disappointed.
Ingredients: (breakfast for 2)
- 2 slices of granary or sour dough bread.
- 1 avocado
- 4 slices of Halloumi cheese
- 4 slices of bacon medallions
- Asparagus
Method:
Cut an avocado in half and remove the seed.
Peel of the skin and mash with the back of a fork in a small bowl.
Wrap the asparagus in tin foil and place into a pre-heated grill with the bacon.
Turn the bacon after 5 minutes and place slices of the halloumi cheese into the tray whilst doing so.
Allow to cook under the grill for a further 5 minutes.
Meanwhile in boiling water poach your eggs. This should take around 3 minutes.
Place some sliced bread in the toaster and when ready spread with a thin layer of avocado.
Top with the grilled bacon and halloumi and add your poached egg and asparagus.
Tuck in and enjoy!
