Avocado Parcels Recipe
Avocado and Eggs has become the ultimate healthy breakfast and this little recipe, with the help of some deliciously crisp Parma Ham will help keep your Avcado-Egg game up to scratch! All you need is 3 ingredients and you have a low carb, high protein and healthy fats breakfast or/ Sunday Brunch Winner. Delicious!
Ingredients:
- Serves 2 people
- 2 eggs
- 6 slices of parma ham
- 2 avocados
Method:
- 1. Preheat the grill to a medium-high heat
- 2. Soft boil both eggs for 5 minutes in boiling water.
- 3. Once the 5 minutes is up, tip out the hot water –try not burn yourself . Add in cold water immediately, give the eggs a gentle tap to break the shell and let sit in the cold water for a moment or two before gently peeling off the shell.
- 4. Next prep the avocado by cutting it in half and remove the skin using a knife. Then using a spoon scoop out the stone. Depending on egg size you will have to scoop out an oval segment from the centre of both sides of the avocado.
- 5. Place the egg halved between the two halves of avocado.
- 6. Taking one slice of parma ham at a time securely wrap the halves avocado until covered.
- 7.Place under the grill for 15 minutes turning after the first 10 minutes.
